Makes 1 Serving
Ingredients
1/2 lb Little Dory Seafood Co. Side Stripe Shrimp Tails, shells removed
1/4 c. Dry White Wine
Juice of 1/2 Lemon
Pat of Butter
1/2 Avocado chopped
1/4 c. Frozen Mango Cubes, thawed
2 TBSP Chopped Cilantro
1 Lime
Gluten-free roll (from Mariposa baking co., Oakland CA)
Salt and Pepper
Preparation
Toss avocado and mango cubes w. lime juice. Â Set aside.
Braise shelled shrimp tails briefly in white wine and lemon juice until cooked, 2 min or less.
Remove shrimp.
Add butter to braising liquid and raise temp, reduce to consistency of thin syrup.
Split roll and grill face down in buttered skillet.
Scatter shrimp in roll, add avocado and mango cubes.
Pour reduced braising liquid over shrimp mixture in roll.
Top with chopped cilantro and lime juice, salt and ground pepper to taste.
