The summer farmer's market offers an abundance of fresh basil! We love to use this recipe with our own basic home-made basil recipe to make an easy, but decadent King Salmon dinner. Pairs well with a salad for a light but hearty meal.

Ingredients
1 lb Wild Caught King Salmon
1/2 c. pine nuts
2 T fresh squeezed lemon juice
2 garlic cloves
2 c. basil leaves
1/2 c olive oil
1/4 c shredded Parmesan cheese
Salt & Pepper
Preparation
Preheat your oven to 400 degrees.
Remove your King Salmon from it's packaging, rinse, and pat dry with paper towels.
To make the Summer Basil Pesto: Add pine nuts, lemon juice, garlic, olive oil, Parmesan cheese & 1/2 t. sea salt to a food processor and blend until smooth. Next, add basil and blend again. Taste and add salt to enhance flavor or additional olive oil for smoothness.
Rub Pesto mix on top of your King Salmon pieces, add a slice of lemon for flavor, and bake for 10-15 minutes until the salmon has reached your desired internal temperature.
