Halibut with Preserved Lemon-Pistachio Sauce

Simple but yummy,

Ingredients

1lb Halibut Fillet

1 Tbs olive oil

8 Tbs butter

4 Tbs chopped pistachios

8 garlic cloves

6 Tbs chopping preserved lemons

4 Tbd lemon juice

2 Tbs water

Salt & Pepper to taste

Preparation

Season Halibut with salt/pepper & then Sauté in 1Tbs of oil until cooked through (flipping occasionally)


Melt butter with pistachios over medium-high heat until both are golden brown, 5-8 minutes - Add garlic & sauté for 30 seconds - Remove from heat. Add preserved lemon, lemon juice & water. Stir vigorously to emulsify


Plate Halibut and top with sauce - I served it on top of rice but the options are limitless
